Need help replacing an image in a .dat file.

This is not Rock Band related but I need a program to replace an image in a .dat file as it can’t be done the way we do it with notepad, any suggestions?
Extensions, specially something as widely used as .dat, can have any form of file structure inside. So a general “how to extract x from a generic .dat” won’t get you far.
Rock band 3 save gane files are .dat, for example. And they have a specific structure and the images inside are in a specific format. C3 CON Tools can work with those. Any variation will need a specialized tool most likely.
You might have some luck with programs that can detect image binaries in files but then you need to hope the image headers are there and the file isn’t encrypted or byte swapped, or worse.
